Kuyteav

Kuyteav (Khmer: គុយទាវ) is a popular Cambodian noodle soup usually consisting of rice noodles and pork broth, among other ingredients. "Kuyteav" was originally brought to Cambodia by the Chinese pioneers who settled in the surrounding region. In Vietnam, "kuyteav" is known as hủ tiếu. In Thailand, "kuyteav" is known as kway teow.

The Phnom Penh version is called "kuyteav Phnom Penh" in Khmer and "hủ tiếu Nam Vang" in Vietnamese (Nam Vang is an old Vietnamese name for Phnom Penh). In Vietnam, "hủ tiếu Mỹ Tho," originating from Mỹ Tho, is also widely eaten.
