Creole cream cheese

Creole cream cheese is a form of farmer cheese that is common in the New Orleans area, made from skim milk, buttermilk and rennet. By itself, it has a mild, slightly sweet taste; frequently, it is mixed with cream, sugar and fruit and served as a dessert. Creole cream cheese had declined in popularity during the 1970s and 1980s and was only available at Dorignac's Food Center in Metairie. It has undergone a resurgence and is now produced by several dairies in South Louisiana and Brown's Dairy in New Orleans makes Creole Cream Cheese Ice Cream.
