Shankarpali

Shankarpali is a snack popular in Maharashtra, India. Shankarpali is traditionally enjoyed as a treat on the Diwali holiday.

It is rich in carbohydrates, making it an instant source of energy.

Ingredients

Shankarpali is typically made from a mixture of Milk, Sugar, Ghee, Maida, Semolina and Salt.

Milk : 1 CupSugar : 1 CupGhee : 1/2 CupMaida : 2 Cups Semolina : 1 CupSalt to taste.

Preparation

The mixture is made into dough and then mechanically cut into diamond shaped units which are deep fried in Ghee or Butter

1. First boil the milk in a vessel. Add the sugar and stir for it to dissolve. Then add the ghee and salt and mix well.2. Then remove from fire. Add maida and rawa (slightly fried) to the mix.Knead the dough and keep aside for 2 / 3 hours.3. Roll it as making a Chappati with a rolling pin. With a cutter make diamond shaped shankarpalis. Fry in ghee till brown.

It is also very popular snack amongst the gujarati community in India. In Gujarati it is called as "shakarpara".shakkar=sugar.It has a high shelf life therefore it is easy to store. As it is so popular it is in high demand, usually people only prepare it at home during diwali, and during rest of the year they purchase it from outside.

This provides a livelihood for ladies who produce it throughout the year and market it.
