freshwater fishnative to the Great Lakes. It is silver in color with a pink and purple iridescence and reaches an average length of 9 inches (23cm).
In British cuisine, the bloater is, like the
kipper, a type of smoked herring, but is differentiated from the kipper by the fact that fish is smoked whole, with its innards intact. According to George Orwellin " The Road to Wigan Pier", the Emperor Charles V erected a statue to the inventor of bloaters.
